Combining the traditions of Edomae sushi with Hokkaido’s distinctive ingredients and food culture, Sushi Saito will pursue a style of sushi found nowhere else.

Sushi Saito was awarded three stars for ten consecutive years by the Tokyo Michelin Guide in its 2010 through 2019 editions. Though ineligible for listing after becoming members-only, it continues to be widely hailed as Japan’s hardest-to-book sushi restaurant. With his assured craft and uncompromising pursuit of excellence in every piece of sushi, owner Takashi Saito stands at the forefront of Japan’s sushi culture.

His notable projects include Shimokitazawa reload, BIOTOP SAPPORO, and NEIGHBORHOOD HARAJUKU.For TRUNK(HOTEL) SAPPORO, Ohori is responsible for the interior design throughout the hotel.

At TRUNK(HOTEL) SAPPORO
A total of ten unique bathing spaces, inviting guests to relax and unwind. The spa experience will begin in a reception area that opens onto a waterway, guiding guests seamlessly into the bathing rooms.
Designed with varied stimuli — temperature, water, light, and sound — this new urban spa experience brings relaxation and exhilaration together.
Inspired by Hokkaido’s natural environment and craftsmanship, the design reinterprets mid-century folklore through TRUNK’s unique perspective.Through the textures and details of natural materials, with wood at its core, the space evokes a sense of nature even in the heart of the city.
